Liver Fry – By Alice Mathew

Ingredients:
1 kg – Liver
2 tablespoon oil
½ teaspoon – mustard seeds
2 medium – onion
2 green chillies
2 tablespoon garlic, 2 tablespoon ginger, 1 ½ teaspoon black pepper (crushed)
Plenty curry leaves
1 tablespoon Kashmiri chilli powder
1 tablespoon coriander powder
½ teaspoon turmeric powder
¼ teaspoon – Star anise
1 ½ teaspoon fennel seeds powder
2 tablespoon black pepper powder
½ cup – water
Salt to taste
Preparation:
In a large pan heat 2 tablespoon oil and splutter mustard seeds. Then add thinly chopped
onions. When it is translucent add green chillies, crushed garlic, ginger, and black pepper. Saute

it for 1 minute. Add the clean and chopped liver. Saute it for 5 minutes. Then add Kashmiri chilli
powder, coriander powder, star anise, fennel powder, turmeric, black pepper, salt, and curry
leaves. Stir fry for 5 minutes. Then add ½ cup water, stir, cover and cook for 10 minutes. When
it is cooked and dry, add another tablespoon oil and fry well. When it is all done, add extra
black pepper powder for hotness and taste. Delicious liver fry is ready.
